What are your favourites? Here's some of mine just off the top of my head but the list is endless.

The Professionals track is heavier than a Buster Bloodvessel dump.
Forgot about that one👍 (The track not the dump!)

...LOVE Radio Birdman.
The first instrumental that ever made an impact for me was The Rumble by Link Wray, which used to get played on weekend Radio shows back in the 70s. It has a sinister dark edge to it, that influenced so many guitar players, the only instrumental to ever get banned by some Radio Stations back in the 50s

Duane Eddy - Ramrod (1957 Version)See also a lot of the early Surf instrumentals e.g. .... The Ventures - Walk Don't Run

...yes, Duane Eddy and The Shadows were the first instrumental bands i heard. The Ventures i discovered much later as they were not well known in the UK.
Link Wrays songs are often much darker though, more 'ambient' he'd hit a power chord and let it ring out, rather than just play melodically as the bass kept the song driving along. When i first heard this it made me think of Martin Rev and Alan Vega... maybe they were Link Wray fans I know that Jimmy Page is.
